20 Delicious Vegan Vietnamese Recipes

Yield: 3 servings

Prep Time: 15 minutes

Cook Time: 20 minutes

Total Time: 35 minutes

Make these delicious vegan Vietnamese recipes from salads to rolls, curry, soup, sandwiches, iced coffee, and more! Protein-rich, flavorful, and fresh.

Ingredients

Tofu in Tomato Sauce

  • 1 block (14 oz) firm tofu, pressed and cut into bite-sized cubes
  • 2 tablespoons vegetable oil
  • 3 ripe tomatoes, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce (or to taste)
  • 1 teaspoon sugar
  • Salt to taste
  • Green onions, chopped (for garnish)
  • Fresh cilantro, chopped (optional, for garnish)

Instructions

  1. Heat 1 tbsp of vegetable oil in a pan over medium heat. Add the tofu cubes and fry until all sides are golden brown. Remove tofu from the pan and set aside.
  2. Using the same pan, sauté minced garlic in another tablespoon of oil. Once the garlic is fragrant, add the chopped tomatoes to the pan.
  3. Cook until the tomatoes start to break down and form a sauce. Stir in soy sauce, sugar, and salt. Adjust to taste and mix well to combine.
  4. Put the fried tofu back into the pan with the tomato sauce. Gently stir and cook for another 2-3 minutes to allow the tofu to absorb the flavors.
  5. Serve warm with green onions and cilantro as a topping. Enjoy with steamed rice!
