These soup recipes are so delicious, you’ll love making them all year round! This creamy butternut squash soup, in particular, is a must-try!

Ingredients

  • 1 large butternut squash (about 3 pounds), peeled, seeded, and cut into 1-inch cubes

  • 2 tablespoons olive oil, divided

  • Salt and pepper, to taste

  • 1 medium onion, chopped

  • 2 cloves garlic, minced

  • 4 cups chicken broth

  • 1 teaspoon fresh thyme

  • 1/2 teaspoon ground nutmeg

  • 1 cup heavy cream or coconut milk

  • Optional garnishes: cream, roasted pumpkin seeds, fresh thyme, or croutons

Instructions

  • Preheat the oven to 400 degrees Fahrenheit.
  • Toss the squash with 1 tablespoon of olive oil, and season with salt and pepper. Spread on a baking sheet in a single layer. Roast for 25-30 minutes or until the squash is tender, turning once halfway through.
  • While the squash roasts, heat the remaining tablespoon of olive oil in a large pot over medium heat. Saute the onion until softened and translucent, about 5 minutes. Add the garlic and saute for another minute, until fragrant.
  • Pour in the broth and bring the mixture to a simmer. Add the roasted squash, thyme, and nutmeg. Simmer for 10 minutes more.
  • Puree the soup with an immersion blender until smooth. Stir in the cream and bring the soup back to a low simmer.
  • Garnish with your choice of toppings.
  • Serve and enjoy!

Notes

  • You can substitute fresh thyme for 1/2 teaspoon dried thyme.
  • Blender option: let the soup cool slightly, then transfer it in batches to a blender and blend until smooth.
