What is a Microwave Mug Cake, Anyway?

Before we go any further, let’s first cover what exactly a microwave mug cake is. As the name suggests, it’s a cake prepared in a mug and baked in the microwave.

Unlike traditional cake recipes, coffee mug cakes serve just one person. In addition, they cook in the microwave, not the oven — most mugs shatter to pieces under such intense heat. Because of their ease and convenience, mug cakes have gained lots of popularity, and we’re not complaining!

Below is an overview of the ingredients and instructions for this recipe. Don’t forget to scroll down to the recipe card below for the complete details!

  • Flour – Regular all-purpose flour forms the base of the cake batter.
  • Unsweetened Cocoa Powder – This creates a rich chocolate flavor base.
  • Espresso Powder – This enhances the chocolate taste. Feel free to use decaf varieties if needed.
  • Milk – Any milk you like best will work.
  • Butter – We recommend using unsalted butter to avoid overpowering the cake.
  • Egg – This adds structure to the cake, helping it hold its shape.
  • Dark Chocolate Chunks – Feel free to swap chocolate chips, and use semi-sweet, milk, or white chocolate instead!

Espresso vs Coffee

Although commonly confused, espresso and coffee are not the same things! Both drinks feature a coffee bean base. However, espresso is a thicker, more concentrated liquid.

Meanwhile, coffee has a higher ratio of water to coffee grounds. As a result, it has a milder taste and a thinner consistency.

Does it Matter What Kind of Espresso I Use?

We recommend using an instant espresso powder. However, any espresso powder you have on hand or find in the store will work just fine!

Can I Use Coffee Grounds Instead of Espresso Powder?

We recommend sticking with espresso powder if you can find it. However, coffee grounds will work in its place if you’re in a pinch.

How to Make Chocolate Coffee Cake in a Mug

  • Mix.To start, add all the dry ingredients to a coffee mug, and mix until they are well combined.

  • Top.Top your mug cake recipe with chocolate chunks. Or, if you’re feeling extra indulgent, press a large chocolate square into the center.
  • Microwave.Place your mug in the microwave, and cook on high until the cake sets. You should be able to insert a toothpick into the center and pull it out clean, apart from the gooey chocolate chunks, of course!

Baking Tips

  • Don’t Overbake! If you leave your coffee mug cake in the microwave for too long it will become way too dry. To prevent this from happening, be sure to keep an eye on it while cooking, and pull it out as soon as the batter has set.
  • Use the Right Size Mug.Most conventional coffee mugs will work just fine. The trick is to allow an extra two inches from the top of the batter. Otherwise, the cake is likely to explode while cooking, leaving you with a mess!
  • Measure Carefully. We recommend using a food scale for the most accurate results and a soft, rich cake. However, if that’s not an option, the spoon and level method is your next best bet!

Serving Suggestions

This chocolate coffee mug cake recipe is best served warm! We recommend topping it with a scoop of vanilla ice cream, but you could also add whipped cream, sprinkles, or fresh fruit!

Microwave for 5-8 minutes (start with 5 minutes and increase the time if the cake isn't done after 5). A toothpick inserted should come out clean.

Why did my mug cake fail? ›

Don't overfill your mug with ingredients

Even with the perfect mini whisk, things can still go wrong when making a mug cake. One big mistake involves overfilling the mug. Just like with any other baked good, mug cakes rise during the cooking process.

Why is my mug cake so rubbery? ›

A rubbery mug cake is indicative of being overcooked, or incorrect measurements. Please be precise with the measurements and stop cooking once the cake is soft but not wet on the top.

Why isn't my mug cake fluffy? ›

Eggs tend to make mug cakes have a bit of a rubbery texture, so bye-bye eggs and hello tender, fluffy cake. As a bonus, it's now vegetarian and can easily be made vegan too. I developed this recipe from wacky cake, a cake that has no eggs in it. I kept it pretty similar but switched out the water for milk.

How do you know when coffee cake is done? ›

Check the edges of the cake, they should slightly pull away from the cake pan. Check the colour – golden brown for lighter cakes, or a shiny matte look for chocolate. The toothpick test – a toothpick or knife should come out clean after inserting into the centre. The internal temperature should be around 98°C/210°F.

Why is my mug cake rock hard? ›

If your mug cake is rock hard, it has been over-baked! Next time, lower the amount of time it cooks, because microwaves vary in wattage, causing some to cook faster than others. Also, be sure to use a standard-size regular coffee cup, not a deep mug.

Can you eat undercooked mug cake? ›

Are Mug Cakes Safe to Eat? Absolutely! Just make sure that you cook them long enough for all of the ingredients to cook thoroughly. Luckily, this recipe doesn't call for eggs, so no need to worry about them being undercooked.

Can you eat raw mug cake batter? ›

Let's make this simple: No. Eating uncooked dough or batter can make you severely sick. The primary risk comes from flour.

Why do mug cakes taste weird? ›

This is especially true when you add too much baking soda to your mug cake mixture, which often results in an unpleasant bitter flavor that makes for a disappointing cake.

Why is my mug cake so dry? ›

Many protein mug cake recipes suffer from dryness because they don't contain enough fat. They use wheat or oat flour, protein powder, and no eggs or oils. Naturally, it's going to be very dry with these ingredients.

Are microwave mug cakes safe to eat? ›

Are microwave mug cakes safe to eat? Yes! Mug cakes are completely safe to consume. Just make sure to microwave them long enough for the cake batter to cook completely!

Why are mug cakes chewy? ›

Why is my mug cake chewy? If your mug cake is chewy or rubbery, it's usually because it's overcooked. Unfortunately, there's not much you can do to fix a rubbery mug cake once it's cooked. Next time, take 15 seconds off of your microwave time.

How do you know if a cake isn't cooked? ›

Usually a cake has finished cooking when the edges of the cake pull away from the side of the tin. You should be able to see a gap between the cake and the tin. If your cake is bouncy/springy when you gently press down on it with your finger, it is likely that your cake is ready to be taken out of the oven.

How do you know when dump cake is done? ›

Bake until the tops are brown and bubbly, 45 minutes to 1 hour. Serve with whipped cream.
