Sometimes it just has to be quick, and frozen fries from the store are much faster and easier to make than from scratch.
It can be difficult to cook great fries at home, as it’s difficult to maintain the right temperature of the oil throughout the whole cooking process. If the oil is too cold the fries become greasy and if it is too hot they burn. With temperature controlled cooking, it’s much easier. You can even make the fries without preheating the oil, just add them directly to the cold oil and you’ll still get delicious crispy fries. Learn how in this recipe.

French Fries
500 gram French fries, frozen
1.5 l Frying oil
0.5 tsp. Salt

Cook the fries from cold oil
Add the frozen french fries to a pot and cover with oil.
Heat the pot to 220 °C on the highest setting (P).
Fry them for about 12 minutes until they are golden and floats to the top, stir occasionally.
Remove them fries from the oil with a slotted spoon and place them on paper towels or similar. Season with salt, while the fries are still hot, to make it stick better.

Cook the fries in preheated oil
Pour the oil into the pot and heat it to 220 °C on high (P). The bottom of the pan reaches 220 ºC well before all of the oil, so let it heat for about 10 minutes until the oil also is heated.
Add the frozen fries to the preheated oil. Fry for about 7 minutes until they float to the top and are golden in colour.
Remove them from the oil with a slotted spoon and place them on paper towels or similar. Season with salt, while the fries are still hot, to make it stick better.
Notes
The fries are equally good whether you make them from cold or preheated oil. Both methods result in fries of the same quality.
