How to Make Low Carb Bacon Cheeseburger Casserole in a Slow Cooker

Cris here.

This recipe is my favorite kind of recipe. It is so versatile that carb lovers and low carb folks both can enjoy it to the fullest. I serve this up for an easy weeknight meal AND when we have guests who aren’t low carb.

We enjoy this recipe over a bed of lettuce with mayo, mustard, low carb ketchup, tomatoes and pickles. We also enjoy it in low carb tortillas or on low carb bread/buns. When we have guests, I just grab a bag of corn chips and regular buns for them to enjoy.

  • We like to make this in our Casserole Crock, however, you can use a 6 quart traditional slow cooker. Or, you could use a 6 quart multi-cooker if you want to cook the ground beef in the same pot.
  • This recipe works best if your cream cheese is VERY soft to mix with the other ingredients. If it isn’t soft, pop it in the microwave for 30 sec to make it nice and creamy to mix in.

Place the ground beef into the bottom of a 6-quart slow cooker. Break up the meat with a large spoon and add the water. Cover and cook on high for 2 to 3 hours or low for 4 to 6 hours. Once the beef is cooked through, carefully pour the excess grease and liquid from the slow cooker dish.

Can you brown burger in a crockpot? ›

Yes! You can brown ground beef in a slow cooker! Many amazing slow cooker recipes call for the ground beef to be cooked in advance.

What is difference between crockpot and slow cooker? ›

However, Crockpots generally have ceramic or porcelain pots, while most slow cookers have a metal pot. As with a lot of cooking appliances, the biggest difference comes from the distribution of heat.

Can I put raw beef straight into a slow cooker? ›

Yes, you most certainly can cook raw meat in the slow cooker! You put it in “cold”, with whatever liquid your recipe calls for, turn it on either “low” or “high” depending on your recipe (I usually start it on “high” for a couple hours, then turn it to “low”), and in 6–7–8 hours, it's now COOKED meat!

What happens if you don't brown meat before slow cooking? ›

"Browning, or caramelizing, meat before putting it into a slow cooker isn't 100 percent necessary, but it is well worth the effort for the most flavorful and full-bodied end result," he says. "The caramelized surface of the meat will lend rich flavor and color to the finished dish."

Can you cook burgers low and slow? ›

Place on grill but do not squeeze or press the meat. Cover the grill. After 10 minutes, open the grill, flip the burgers using the tongs on the top and bottom of the burger, being careful not to press the burgers but simply to turn them. Re-cover the grill and allow the burgers to cook slowly for another 10 mnutes.

Do you need oil to brown hamburger meat? ›

If you're working with a nonstick pan, you may not need to add any additional oil. The natural fat from the ground beef will help the meat brown and prevent it from sticking. If you prefer, you can add 2 teaspoons of olive oil to the pan before adding the beef.

What is the best meat to slow cook in a crock pot? ›

Choose the right cut: Chuck roasts, short ribs, pork shoulders and lamb shanks (think fatty and tougher meats) become meltingly tender with the moist, low heat of a slow cooker. Leaner cuts like pork tenderloin tend to dry out. Likewise, dark meat chicken — thighs, drumsticks, etc.

Is it safe to cook raw meat on low in crock pot? ›

The low heat helps less expensive, leaner cuts of meat become tender and shrink less. The direct heat from the pot, lengthy cooking and steam created within the tightly-covered container combine to destroy bacteria and make the slow cooker a safe process for cooking foods.

Can I put frozen raw ground beef in crock pot? ›

It is best to thaw meat or poultry before putting it into a slow cooker. Frozen pieces will take longer to reach a safe internal temperature and could possibly result in foodborne illness. Frozen or partially frozen foods can also cool everything else in the slow cooker.

Can you slow cook pre cooked meat? ›

Reheating leftovers in a slow cooker is not recommended. Cooked food should be reheated on the stove, in a microwave, or in a conventional oven until it reaches 165 °F. Then the hot food can be placed in a preheated slow cooker to keep it hot for serving—at least 140 °F as measured with a food thermometer.

Can you leave raw meat in slow cooker overnight? ›

Yes, it is generally safe to cook meat in a crock pot overnight, ensuring it reaches a safe internal temperature of 165°F (74°C) to avoid foodborne illnesses. I would just let it run on low, not warm, all night.

Do you cook hamburger before making chili? ›

Raw meat and pot of chili are two things that just don't belong together. If the recipe includes any type of ground meat, bacon, chorizo, or cubes of beef, it should always be browned first. Try this: The first order of business before adding anything else to the pot is to brown any meat in your recipe.

What happens if you don't brown meat for chili? ›

A Case For Not Browning

You will also overcook your meat, which leads to tougher, pebblier end results. If you don't brown your meat, you'll end up with a rich, silky, tender texture. On the other hand, your flavor won't be as deep. And that's just the sad fact that we have to live with.
