This self rising flour banana bread is not only delicious and moist, but it’s incredibly easy to make.

I love making a loaf of this easy, moist banana bread at the start of a week and then enjoying a slice alongside fresh fruit for breakfast each day.

To make it easy for you, I’ve included all the tools and ingredients you’ll need below!

What ingredients do I need to make self rising flour banana bread?

Base Ingredients:

Bananas – Use 3 medium-large bananas or 2 medium-large bananas + 3/4 cup unsweetened applesauce

Self-Rising Flour – It already has salt and baking powder in it, so no baking soda needed

Sugar – I typically use granulated sugar for this recipe, but you can also use honey or maple syrup

Eggs – You’ll need 2 large eggs for this recipe

Oil – You can use any kind of neutral-flavored oil or melted butter, if preferred

This trio of ingredients, add SO much flavor to this banana bread recipe!

Optional Toppings:

Toppings on this banana bread are of course optional, but I love the touch of sweetness the chocolate chips add, and the added crunch from the chopped nuts.

In case you’ve never baked banana bread before, I’ve included my 3 BEST tips for making amazing banana bread very single time.

1. USE REALLY RIPE BANANAS

You know when your bananas turn brown, spotty, squishy, and you think they need to be thrown away?

Don’t toss them – use them for banana bread!

Remember, the more ripe the bananas are, the sweeter they are, and the better they taste in banana bread.

2. DO NOT OVERMIX THE BATTER

When making breads and muffins, it’s very important not to overmix the batter.

Overmixing makes the mixture dry and tough when you bake it, and nobody likes dry baked goods, right?

I recommend stirring by hand and mix until JUST combined. (A little flour showing is fine!)

Unlike all-purpose flour where you have to add additional ingredients to ensure baked goods rise properly, self rising flour already has everything you need in it.

It’s made up of all-purpose flour,salt, and baking powder and is a great ingredient to have on hand.

How many bananas do I need for banana bread?

I designed this recipe to be versatile, because I know sometimes you may only have a few extra bananas lying around.

For this recipe, you can use either 3 medium to large bananas or 2 medium to large bananas + 3/4 cup of applesauce.

I frequently find myself only having 2 bananas leftover, and this recipe works perfectly!

The applesauce will replace the extra banana and helps add more moisture to the bread.

How ripe should bananas be for banana bread?

Very ripe! The browner the better, and the sweeter the flavor.

You never want to use bananas with bright yellow (or green) skin, as these will not be sweet enough.

Instead, wait until your bananas have turned brown, freckly, and are mushy.

They will make the perfect banana bread.

Can I freeze overripe bananas?

Yes, absolutely! You should never throw away overripe bananas, as they make THE BEST banana bread.

Place overripe bananas directly in the freezer (peel and all) for up to 3 months.

How to use frozen bananas in banana bread:

First remove frozen bananas from the freezer, and run hot tap water over them for 1-2 minutes.

Next, peel the skin off your bananas and microwave in a bowl for about 3 minutes until thawed. Mash and use in the recipe as directed.

Instructions

  • Preheat oven to 350 degrees F and grease a 9×5 inch loaf pan.
  • First place your bananas in a large mixing bowl and mash together using a fork or potato masher. Next add in oil, eggs, sugar, cinnamon, vanilla, orange juice, and applesauce if only using 2 bananas.
  • Use a whisk and mix until well combined.
  • Next add the self rising flour in increments and gently fold the batter until just combined. DO NOT OVER MIX.
  • Pour the banana bread batter into a greased loaf pan. If desired, top with chopped nuts and chocolate chips. Bake in the oven for 38-45 minutes, or until the top is lightly golden brown and a toothpick comes out clean.
  • Immediately place the pan onto a wire rack to cool for 15 minutes before removing from pan and slicing.

  • Store leftover banana bread slices in an airtight container in the refrigerator for up to 1 week. To re-heat, place banana bread in the microwave for 30 seconds at a time until desired temperature.

Wrap the banana bread in plastic wrap and store in a freezer safe bag for up to 3 months.

Once ready to eat, thaw overnight on the counter to enjoy the next morning, or to enjoy immediately bake the entire loaf in the oven for 15 minutes at 350 degrees. You can also re-heat individual slices of banana bread in the microwave for 30 seconds at a time until warm.
