  • Chicken Stock: Chicken Stock or Chicken Brothadds flavor to the soup. Beef broth can be used as well.
  • Pasta: You can use eitherlasagna noodles broken into pieces or smaller pasta. I used mafalda noodles, which look like bite sized lasagna noodles. You can even use gluten free noodles if you prefer.
  • Heavy Cream: Instead of using ricotta cheese, This lasagna soup recipe is made creamy from heavy cream (or half and half).If you want this recipe to be dairy free, you can omit the cream, just make sure your marinara sauce does not have cheese in it.

Step 1. Heat a large dutch oven over medium heat.Add italian sausage and brown meat, breaking it up as you go. Continue to brown until cooked through. Drain extra fat, if needed.

  • There is no need to add an oil before browning the italian sausage, as there is already enough fat in it.
