Juicy, Oven Baked Chicken Thighs

Sometimes chicken for dinner might sound boring but we promise, our recipe for crispy oven baked chicken thighs is anything but! Our bone-in, skin-on thighs cooked in the oven are full of flavor with tender, dark meat. Chicken thighs have a bit more fat than chicken breast, which helps to create a flavorful, juicy interior. You won’t have to worry about your chicken drying out in the oven, especially because we’ve kept the skin on. This helps the chicken to stay moist inside but allows for the exterior to become deliciously crispy. Similarly, our Baked Crispy Chicken Thighs offer great texture. We guarantee you the perfect bite when all is said and done!

Want Crispy Oven Baked Chicken Thighs?

The best oven baked chicken thighs start with seasoning! A blend of garlic powder, paprika, onion powder, salt and fresh cracked pepper brightens up plain old chicken thighs and adds wow-worthy flavor. But I know you are wondering– should you cover chicken thighs when they are baking? The simple answer is, no. We don’t cover our skin-on chicken thighs because we want that skin to get nice and crispy! To achieve this just follow these 4 simple steps!

  1. Place your chicken on top of a metal rack set inside a large rimmed baking sheet. Pat the chicken dry with a paper towel and use kitchen shears to trim off any excess fat.

  2. Drizzle the chicken with olive oil and sprinkle your seasoning mix over the chicken. Don’t be afraid to get your hands a little dirty and rub it in!

  3. Turn the oven temperature down and bake until the internal temperature reaches 165°F. How long to cook chicken thighs in oven you ask? This takes about 30 minutes.

  4. Dig in and admire the crisp chicken skin and tender, juicy meat.

Are Quick Baked Chicken Thighs Healthy?

In general, chicken is a great alternative to red meat, especially if you are looking to lower your intake of saturated fats. Chicken thighs are a good source of protein and we especially love that they contain immune boosting nutrients such as iron and zinc. Our chicken thighs are baked in the oven, for a slightly healthier cooking method. We’ve also featured simple ingredients like olive oil and spices, instead of breading our chicken thighs or cooking them in highly refined oils or butter. If you’re looking to pair our oven baked chicken thighs with a veggie packed side dish, try one of these:

  • Simple Italian Salad

  • Perfectly Roasted Broccoli

  • Pesto Green Beans

  • Moroccan Beet Salad

Can I Refrigerate Leftovers? Of Course!

We are always in favor of some scrumptious leftovers! Cooking one recipe and serving it for two meals? Count us in! If you have a few leftover oven baked bone-in chicken thighs, place them in an airtight container and refrigerate for up to 4 days. When ready to serve, don’t miss out on that deliciously crisp skin. Heat your chicken through in the microwave or oven and then place your bone-in, skin-on chicken thighs on a sheet pan, if you haven’t already. Set your oven broiler to high and broil for 2 to 3 minutes (but watch carefully), until the chicken skin crisps up. Sprinkle a pinch of salt over your baked chicken thighs, and meal two is ready to serve!

FAQs

Is it better to bake chicken thighs at 350 or 400? ›

I recommend baking the chicken thighs at 400 degrees for less time to ensure the chicken thighs stay nice and juicy, vs baking for longer at 350 degrees and running the risk of drying them out.

Is it better to cover chicken thighs when baking? ›

We don't cover our skin-on chicken thighs because we want that skin to get nice and crispy! To achieve this just follow these 4 simple steps! Place your chicken on top of a metal rack set inside a large rimmed baking sheet. Pat the chicken dry with a paper towel and use kitchen shears to trim off any excess fat.

What cooking method is best for chicken thighs? ›

Chicken thighs are right at home on the grill; they retain their moistness throughout this high heat cooking method. Set up your grill with two zones — one for direct heat where you can sear and char and crisp up the exterior and the other zone for indirect (medium to medium-low) heat to allow thighs to finish cooking.

How long does it take to cook chicken thighs at 400 degrees? ›

You'll want to bake these at 400 degrees for 35-45 minutes without moving or turning them during the process. This temperature and time ensure that crispy outside and juicy inside we're looking for. The chicken should reach an internal temperature of 165 degrees before being consumed.

At what temp are chicken thighs most tender? ›

For the ultimate juicy and tender chicken thigh experience, aim for an internal temp between 175 and 185 F. Any temperature higher than that can dry out or burn your meat, but the perfect 175° to 185° range will get you well above the minimum safe temperature and maximize the poultry's flavor potential.

Can you overcook chicken thighs in the oven? ›

Since they have a higher fat content and retain moisture during cooking, it's more difficult to overcook chicken thighs than it is to overcook chicken breasts. Particularly if you buy bone-in chicken thighs, they mostly just fall off of the bone if you leave them in the oven too long!

How do I make sure my chicken thighs are fully cooked? ›

If you are not sure the chicken is done, you can poke it with a knife and if the juices run clear it is ready.

Do chicken thighs get more tender the longer you cook them? ›

Dark meat has an abundant amount of connective tissue, which dissolves into gelatin as the meat cooks, rendering it juicy and tender. The longer it cooks, the more that connective tissue breaks down.

Do you cook chicken thighs skin side up or down first? ›

Starting the chicken skin side down in a cold skillet lets the fat render slowly and results in the crispiest skin imaginable,” explained senior food editor Chris Morocco.

Do you wash chicken thighs before baking? ›

"Washing can spread germs from the chicken to other food or utensils in the kitchen." We didn't mean to get you all hot about not washing your chicken! But it's true: kill germs by cooking chicken thoroughly, not washing it. You shouldn't wash any poultry, meat, or eggs before cooking.

How to make chicken thighs taste better? ›

To make the chicken thighs, rub them with our easy mustard rub, which consists of mustard, lemon zest, oregano, thyme, salt, and olive oil. This rub adds so much flavor to the chicken! For a garlic flavor, toss a couple of garlic cloves into oil in the skillet you plan to cook your chicken in.

Do you have to flip chicken thighs in the oven? ›

I just season them however I like, put them on a baking sheet, and cook them until they're cooked through. Yes, you should flip chicken breasts or thighs when cooking them in the oven. This will help them cook evenly and prevent them from becoming dry.

Is it better to bake chicken at 350 or 400? ›

It's better to cook chicken breast at 400°F. The less time it spends in the oven, the juicier it will turn out. Therefore, it's good to cook it at a high temperature for a short period of time.

Is it better to cover chicken with foil when baking? ›

Larger cuts, such as whole chickens or bone-in pieces, often benefit from covered baking to ensure thorough and even cooking. Smaller cuts, like chicken breasts or tenders, can be baked uncovered for quick results.

Is it better to bake chicken at 375 or 400? ›

Given the fact that drumsticks and thighs are dark meat and won't dry out as easily as breasts, the range from 350 to 450 degrees is okay for baking them. 350 to 375 is generally best for breasts. The best answer to these questions? Simply check the chicken for doneness using an instant read thermometer.

Why are my baked chicken thighs tough? ›

Rubbery chicken is usually an indicator of overcooked chicken. The longer the chicken cooks, the more moisture it loses, and without moisture, the protein fibers become elastic, AKA rubbery.

Is 400 too high to cook chicken? ›

The optimal baking temperature for chicken depends on the specific recipe and desired results. However, a general guideline is to bake chicken at a temperature between 350°F (175°C) and 400°F (200°C).

Is it better to cook chicken thighs skin up or down? ›

Place the chicken thighs skin-side down on the grill or grill pan. Grilling chicken thighs with the skin on is a great way to keep the meat moist in the cooking process. If you don't want the added calories and fat, just remove the skin before serving.
