How do I store fresh truffles?
Buying fresh truffles can be a real luxury. Knowing how to store your truffles will ensure they’re in perfect condition when you’re ready to use them. Follow these few simple tips to keep your truffles fresh.
How will the truffles arrive?
Every fresh truffle has been individually checked before it’s sent out to you, carefully packed in an insulated box to ensure they arrive fresh and in optimum condition. However, it’s important to unwrap your truffles from their packaging as soon as they arrive.
How to clean fresh truffles
The truffles we deliver are so fresh, they may still have a fine covering of soil or sand from when they were first unearthed. Washing them under a cold tap for a few seconds, then drying them gently, won’t affect the truffle’s flavour.
Sometimes you will see a trace of light ‘bloom’ on the surface – this happens naturally when the truffles are exposed to the air for the first time. Simply brush it away lightly with a soft brush whilst washing under cold running water, then dry the truffles with fresh kitchen paper towel.
How to keep fresh truffles
Once cleaned, wrap each truffle individually in a fresh sheet of kitchen paper towel. Place the wrapped truffles in a clean, airtight plastic or glass container – a flip-top jar with a tight seal works well.
Change the paper towel every 24 hours and re-wrap the truffles. Put them back in their container and refrigerate, repeating the process until you are ready to use them.
Do fresh truffles need to be refrigerated?
We suggest keeping fresh truffles in the coolest part of the fridge, ideally at 1 to 2°C.
However, be careful not to freeze them by accident.
How long do fresh truffles keep for?
For fresh truffles to be enjoyed at their best, they should be consumed within 4 to 5 days. The autumn variety of the black truffle, Tuber uncinatum, can retain its flavour for up to two weeks, but the highest-quality white and black truffles are best enjoyed within a few days of delivery.
Some storage tips for fresh truffles
Tip 1:Store fresh eggs in the same container as your truffles. The slightly permeable eggshell allows those amazing fresh truffle flavours to infuse, giving you the perfect ingredient for a deliciously rich, truffled omelette.
Tip 2:Don’t throw away the paper towel once you’ve unwrapped the truffle. Putting it in your jar of arborio rice will add tantalising hints of truffle to your next risotto.
