Finding foods that you enjoy on your vegan journey can be difficult especially in the beginning because you still want the food to taste good or familiar to foods that you are used to eating.

Previously I spoke about the power of using jackfruit and mushrooms in a lot of different recipes but, this time I wanted to give you a variety of recipes that are vegan.

You can also make these recipes if you are vegetarian you would just need to customize it to your liking.

Having a variety of different recipes to try will make your transition to vegan or vegetarian a lot easier.

Listed below you will see six recipes with the ingredients and location of how the recipe was prepared below.

The vegan burrito bowl was created by Veggie Inspired, the blogger Jenn Sebestyen provided the ingredients below.

FOR THE BURRITO BOWL

  • 1 15 oz can black beans
  • 8 oz frozen corn kernels
  • 2 cups dry instant brown rice
  • 12 oz jar Salsa, (I like Trader Joe’s Salsa Authentica, but use your favorite)
  • 1 red bell pepper, (diced)
  • handful cilantro, (chopped)

CREAMY AVOCADO DRESSING

  • 1 ripe avocado, (smashed)
  • ⅓ cup vegan sour cream
  • 1 tbsp lime juice
  • 1 tsp cumin
  • ½ tsp chili powder
  • salt and pepper to taste
  • 2–3 tbsp non dairy milk to thin, (if necessary)

This recipe is quick and easy to prepare, even your kids will have a great time making this recipe with you.

The second recipe that we have is the crispy carrot patties created by Vegansandra, the blogger Sandra Vungi-Pohlak provided the ingredients below.

  • 2 large carrots (about 2 cups grated carrots)
  • 14 oz / 400 g canned beans (I used white beans) or chickpeas
  • 1 onion
  • 3/4 tsp dried rosemary
  • 3/4 tsp dried thyme
  • 1/2 tsp ground cumin
  • 1/2 tsp curry powder
  • 1 tsp salt
  • 1/2 cup / 80 g whole wheat flour or oat flour or GF flour
  • oil for cooking (I use sunflower oil)

This would be good for a snack or a quick bite to eat when you are running out the door. This recipe only takes 30 minutes to cook.

The vegan taco casserole was created by Build Your Bites, the blogger Joy Shull provided the ingredients below.

  • 1 medium onion, chopped
  • 7 cloves of garlic, finely chopped or minced
  • 1 1/2 teaspoon chili powder
  • 2 teaspoons cumin
  • 1 1/2 teaspoon basil
  • 1/2 teaspoon cayenne
  • 1/4 teaspoon smoked paprika
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon cracked black pepper
  • 2 tablespoons extra virgin olive oil
  • 1 (15 oz) can of black beans, drained
  • 1 (15 oz) can of great northern beans, drained
  • 1/2 cup nutritional yeast
  • 2 1/2 cups chunky salsa (I used medium heat)
  • 14 oz organic yellow tortilla corn chips, plus more for serving
  • Lime juice for topping
  • Green onions for topping

I love the thought process of this recipe because I am always craving tacos and I always enjoy vegan recipes that involve tacos.

The easy vegan fried rice was created by Minimalist Baker, the blogger’s name was not listed but they did provide the recipe below.

RICE + VEGETABLES

  • 1 cup extra-firm tofu* (8 ounces yields ~1 cup)
  • 1 cup long- or short-grain brown rice* (rinsed thoroughly in a fine mesh strainer)
  • 4 cloves garlic (minced)
  • 1 cup chopped green onion
  • 1/2 cup peas
  • 1/2 cup carrots (finely diced)

SAUCE

  • 3 Tbsp tamari or soy sauce (plus more for veggies + to taste)
  • 1 Tbsp peanut butter
  • 2–3 Tbsp organic brown sugar, muscovado sugar, or maple syrup
  • 1 clove garlic (minced)
  • 1–2 tsp chili garlic sauce (more or less depending on preferred spice)
  • 1 tsp toasted sesame oil (optional // or sub peanut or avocado oil)

The best veggie burger was created by Nora Cooks, the blogger Nora Taylor provided the recipe below.

  • Flax eggs — Just ground flaxseeds and water, this helps keep the burger from falling apart.
  • Black beans — You could also use a different bean, such as kidney, chickpea, or pinto.
  • Ground/chopped fine cashews — May also use sunflower seeds, pepitas, or almonds. Omit if needed, but they add a lot of texture.
  • Cooked brown rice — Or substitute quinoa
  • Fresh chopped parsley
  • Shredded carrots
  • Chopped green onions
  • Breadcrumbs — For gluten-free, substitute with gluten-free breadcrumbs, rolled oats, or almond flour
  • Smoked paprika
  • Chili powder
  • Salt

The last recipe that we have is the vegan buddha bowl which was created by Well and Full, the blogger Sarah provided the ingredients.

Quinoa

  • 1 Cup Quinoa rinsed
  • 2 Cups Water

Chickpeas

  • 1 1/2 Cups Cooked Chickpeas
  • Drizzle Olive Oil or other neutral oil
  • 1/2 Tsp Salt
  • 1/2 Tsp Smoked Paprika
  • 1 Tsp Chili Powder
  • 1/8 Tsp Turmeric
  • 1/2 Tsp Oregano

Red Pepper Sauce

  • 1 Red Bell Pepper ribs and seeds removed
  • 2 Tbs Olive Oil or other neutral oil
  • Juice from 1/2 Lemon or more to taste
  • 1/2 Tsp Pepper
  • 1/2 Tsp Salt
  • 1/2 Tsp Paprika
  • 1/4 Cup Fresh Cilantro

Everything Else

  • Mixed Greens
  • An Avocado
  • Sesame Seeds for Garnish

The six recipes are great for newbies or even advanced vegans to try. It will give you a different experience whether you are in the mood for a taco or a nice healthy buddha bowl.

Since vegan food has transformed over the years, we have been given so many options to choose from.

We no longer have to feel as if we are missing out on something or that we have to give up how we enjoy food.

I think that is one of the most important things being able to enjoy food and put healthy food into our bodies, so we can continue to have more energy and continue to feed our brains and bodies.
