A traditional charcuterie board features cured meats, cheeses, andgarnishes. You’ll find everything from simplecheddar and sliced deli ham togourmet Italian prosciutto and imported cheeses. Garnishes can includeeverything from fancy mustards and pickles to sauces. With a VegetableCharcuterie board, the concept isthe same – a selection of tempting fingerfoods – but the selection is different!

Gather these ingredients
- Radicchio
- Radishes, such as watermelon radishes

- Carrots– Skinny baby carrots with the stems stillon them
- Mini cucumbers– Or English cucumber thinlysliced
- Mini bell peppers
- Snap peas
- Your favorite dips– Great choices include spinachdip, hummus, salsa, or even whipped feta dip.
How to make a vegetable charcuterie board
- Placea bowl of dip off to one side on a largeboard. I like using this Big Board from the Reluctant Entertainer so there’s room for lotsof goodies!
- Layerleaves of radicchio around the platter,then fill in the spaces with the vegetables.
- Adddips and any other goodies you might want to theboard, then serve!
Tips to make the best vegetable charcuterieplatter
- Usewhat’s inseasonand look for vibrant, rich colors.
- Servebaguette slices, or pita wedges or chips on the side for those whowant something a bit moresubstantial.
- Includeat least4 different kinds of veggies.
- Include a dip– or if your platter is really big, 3dips.
- If you wish, youcanblanchthe veggies first by dunking them in boiling water for 1minute and then chill them inice water to make them more vibrant.
- Don’tcut the veggies more than2 hoursahead of time to keep them freshand crisp.
- Becreative, and don’t be afraid to put it on the board!
Variations
- Try pickledgreen beans, pickledasparagus, pickled beets, or pickled onions.
- Add your favorite cheese.
Serving suggestions

Storage
Wrap up any leftover veggies and other nibbles and store them inthe fridge for 2-3 days.

- Broccoli Florets
- Cauliflower florets, the more colorful the better!
- baguette slices, or pita wedges for serving
- Dried Nuts such as pistachios or Marcona almonds
- Your favorite dips – Great choices include:, hummus, spinach dip, salsa, or whipped feta dip
Instructions
Fill some small bowls with dips of your choice.
Around the dip place the remaining ingredients.
