Why do people put mayonnaise on chicken before cooking? ›

Mayonnaise makes chicken moist and flavorful

Brines and marinades help tenderize the meat by bringing more moisture in the protein. With that extra moisture, you lose less when you cook. The simplest way to do this is with a dry brine — unwrap the chicken breasts, salt them on both sides and let them sit in the fridge for at least an hour.

What is the best ingredient to tenderize chicken? ›

We recommend marinating your chicken in buttermilk or yogurt overnight, but if it's urgent, then an hour will do. However, the texture of the chicken won't be as even as chicken marinated overnight.

What can I use to coat chicken instead of mayo? ›

You can use beaten eggs, buttermilk, or even a mixture of olive oil and Dijon mustard as a coating for the chicken thighs instead of mayo. These alternatives will help the breading stick to the chicken and add flavor without using mayo.
